Salad Recipes

During the summer months it seems that entertaining and meals are mush more casual. People like to organize barbeques for family and neighborhood gatherings. Summer time is when I pull out my salad recipes and create fresh light dishes. Last summer I organized a big party for my neighbors and friends. Everybody liked the food and all women asked for my salad recipes. We had a salad bar as a theme for the barbeque. We had grills going for hamburgers and hotdogs and then had a variety of salads to go along with the meat. I asked each neighbor to make their favorite salad recipes and to bring hamburgers or hot dogs. This was a great idea to all of us.

We had a wide variety of delicious dishes. We laughed that we should print a cookbook of salad recipes because we were exchanging recipes with each other most of the afternoon. My salad recipes were easy to make and two of my favorite recipes had huge success. I like to mix things which normally people don’t think putting together in salad recipes, like spinach and strawberries with spicy poppy seeds dressing. Or three different types of peppers mixed with three types of cheese and mushrooms, or everybody’s favorite apple pickle salad with sunflower seeds.

My secret is that salad recipe has to be creative, but easy and fast to prepare, and not include too many different ingredients. I make light dressings using mostly oil and vinegar with spices. I also like ranch-style salad dressing, but I make it very light, not to kill taste of vegetables and fruit in salad. Here is apple pickle salad recipe. Mix together the apples, sunflower seeds, lettuce. Pour dressing on top, toss and enjoy!

3 green apples - washed, cored and cubed
1 cup sunflower seeds
1 head romaine lettuce - rinsed, dried, and chopped
3 dill pickles, diced
1/2 cup ranch-style salad dressing

We decided to have salad parties every summer. And this coming summer I will make something new and I am sure everybody will like my salad recipes.
